Chiloé Island Gastronomy(Reads: 176, since 23-Jun-2011)Potatoes are one of the most important ingredients in the Chiloé islanders diet, along with meat and sea produce which were all part of their ancestors staple diet.
The islanders consume a wide range of food like; causeos (chopped cold food) and barbeques, ribs, seafood soups and the famous curanto cooked in a pot called Pulmay, the Cazuela (Stew) Chilota which consists of lamb and pork scratchings; or the Chapaleles which are small wheat flour, fried breads that are usually served with the Curanto. At the beginning of the 90s salmon became a popular dish because the salmon industry was established in the area at this time and it has since become a favourite for tourists, particularly North American and European.
